Traditions and Values


Extravirgin olive oil has always been rich with great
symbolic values: in ancient Greece the one who damaged olive trees was sent on a trial by
jury. athletes of the Olympic games were used to greasing their bodies before games. In
the east it was considered a a symbol of light, because lamps were fed with oil. In the
religious tradition we can't forget the dove which brings Noah a branch of olive . The
cross of Jesus Christ was made of an olive tree, Mount of the olives and the garden of
Jetsemani . Still today in every church the greasing with olive oil is used to bless ill
people.
